Rose Gray and Ruth Rogers of The River Café have inspired Melt’s Master Chocolatier, to create a stunning Dark Chocolate Truffle.
The name Melt was born over one of those blissful, warm summer evenings at The River Café, which seemed to bode well for our future. We were therefore thrilled to link up with Rose and Ruth to collaborate on a classic dark chocolate truffle. After many versions of the recipe, we decided unanimously on a rich, decadent Italian style truffle using one of the highest quality chocolates available, ‘9’, from the exclusive Italian company Amedei.
A 75% bitter chocolate, beautifully balanced with cocoa from 9 different bean varieties from 9 plantations. Rose and Ruth requested we use a creamy, mild, unsalted butter from Padova in Northern Italy and cream to create this perfectly textured truffle with no preservatives or emulsifiers. This chocolate does not contain soya lecithin which is very unusual even with good quality chocolate.
Our Master Chocolatier enrobes the truffles as thinly as possible by hand with the Amedei ‘9’, followed by a final dusting of 100% cocoa powder.
